Dr M’s Walnut and Goat’s Cheese salad

This is a great salad to share with a table of friends…
  • 1 bag of mixed leaf lettuce
  • 1 punnet of cherry tomatoes
  • 1 large cucumber
  • 1 cup of chopped red cabbage
  • 1/2 cup of walnuts
  • goats cheese or goats feta
  • balsamic vinegar
  • [i]Preferably use organic vegetables [/i]
  1. Place lettuce on a large serving plate
  2. half cherry tomatoes and place on top
  3. add cut cucumber and chopped red cabbage
  4. place walnuts into a ziplock bag and break up with a kitchen hammer
  5. sprinkle walnuts on top
  6. break the goat’s cheese up into small pieces and spread evenly
  7. dress with balsamic vinegar.
