Dr M’s Sensational Salmon Cakes

This is a great recipe for lunch or dinner….. Enjoy
Ingredients
- 2 x large tin of Red or Pink Salmon
- 2 x eggs
- 1/4 bunch of Coriander
- 2 tbsp finely chopped spring onions
- 1 tbsp finely chopped lemon grass
- 1 tbsp coconut flour
- Himalayan Rock salt to taste
Instructions
- Drain salmon and add to large mixing bowl
- add whisked eggs
- add all other ingredients
- combine either by hand or with a food processor
- roll palm size cakes
- Heat a fry pan over medium heat
- Using either macadamia oil or coconut oil cook cakes until golden brown
- serve with a salad and 1/4 avocado on top per serve
