Dr M’s Coconut Perfect Pikelets…

This is a delicious snack or dessert for all ages. It’s paleo friendly, gluten and dairy free and best of all it tastes great!
Ingredients
- 1/2 cup coconut flour
- 1/2 cup pea protein powder
- 1/2 cup coconut milk
- 1/2 cup of water
- 1 tsp vanilla essence
- 1 tsp baking powder
- To cook and top with
- 1 tbls coconut oil
- 1/2 cup crushed hazlenuts
- agave or maple syrup
Instructions
- Mix and whisk wet ingredients
- combine dry ingredients
- combine wet and dry ingredients
- heat pan on medium heat and add coconut oil
- Pour 1/3 cup of batter into pan
- cook on each side for approx 1-2 mins
Notes
the pikelets won’t bubble on the pan like traditional flour pikelets, and will be a thicker batter… Enjoy!
