Dr M’s Fancy Omelette … some may say Frittata

This is a super fast recipe, great for when you are in a rush, or want minimal preparation….
  • [b]Omelette[/b]
  • 2 x eggs
  • 1 tbsp water
  • [b]Toppings[/b]
  • 4 cherry tomatoes
  • 4 – 6 basil leaves
  • tbsp goats cheese
  • 2 slices of prosciutto (nitrate free)
  1. Whisk eggs and water
  2. heat a small fry pan over medium heat
  3. add macadamia oil to the pan
  4. when hot pour in omelette mixture
  5. with a spatula move the set egg towards centre and let runny egg move to the outside of the pan to set
  6. when egg is set add the toppings
  7. put lid on pan for 1 -2 minutes
  8. Serve with a salad.
