Dr M’s Chicken Curry with Cauliflower Rice

This curry is delicious, and if you are looking for a rice alternative cauliflower rice is the best! and even the kids will love it!
Ingredients
- [b]Curry[/b]
- 1 kg Chicken
- 1/2 Jar of Curry Paste ( paste of your choice, I use Penang.)
- 1 large brown onion
- 1 can coconut cream
- 1 cup of water
- 5 kaffir lime leaves
- 2 tbsp lemongrass
- 1/2 bunch coriander
- 1 red capsicum
- 1/2 head of broccoli
- 2 tbsp fish sauce
- 1 lime

- Cauliflower RIce[/b]
- 1 head of Cauliflower
Instructions
- [b]Curry[/b]
- Heat a heavy based pot over medium heat.
- add 2 tbsp of coconut oil
- add diced onions to pot and cook until transparent
- add curry paste and cook until fragrant
- Cut chicken into cubes and add to pot to brown
- add coconut cream and water and bring to the boil
- add Kaffir Lime leaves and lemongrass
- simmer for 20 minutes
- add half the coriander, and capsicum and broccoli cook for 5 minutes
- just before serving add the juice of 1 lime and fish sauce
- add other half of coriander when serving

- On the stove[/b]
- steam cauliflower until soft, put into a food proccessor and blitz til rice like consistency
- [b]Microwave[/b]
- Put cauliflower into food processor and blitz until rice like
- in a sealed container microwave on high for 5-6minutes
