Dr M’s Sensational Salmon Cakes

This is a great recipe for lunch or dinner….. Enjoy
Ingredients
  • 2 x large tin of Red or Pink Salmon
  • 2 x eggs
  • 1/4 bunch of Coriander
  • 2 tbsp finely chopped spring onions
  • 1 tbsp finely chopped lemon grass
  • 1 tbsp coconut flour
  • Himalayan Rock salt to taste
Instructions
  1. Drain salmon and add to large mixing bowl
  2. add whisked eggs
  3. add all other ingredients
  4. combine either by hand or with a food processor
  5. roll palm size cakes
  6. Heat a fry pan over medium heat
  7. Using either macadamia oil or coconut oil cook cakes until golden brown
  8. serve with a salad and 1/4 avocado on top per serve
