Dr M’s Coconut Perfect Pikelets…

This is a delicious snack or dessert for all ages. It’s paleo friendly, gluten and dairy free and best of all it tastes great!
Ingredients
  • 1/2 cup coconut flour
  • 1/2 cup pea protein powder
  • 1/2 cup coconut milk
  • 1/2 cup of water
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • To cook and top with
  • 1 tbls coconut oil
  • 1/2 cup crushed hazlenuts
  • agave or maple syrup
Instructions
  1. Mix and whisk wet ingredients
  2. combine dry ingredients
  3. combine wet and dry ingredients
  4. heat pan on medium heat and add coconut oil
  5. Pour 1/3 cup of batter into pan
  6. cook on each side for approx 1-2 mins
Notes

the pikelets won’t bubble on the pan like traditional flour pikelets, and will be a thicker batter… Enjoy!
